2 cube steaks
½ c. milk
2 c. whole wheat flour (about 1 ½ c. hard red wheat berries)
4 TBS. tallow, lard, or ghee
Take one steak and dip it in the milk, then in the flour, then in the egg, and then in the flour again. Repeat with the second steak. Make sure the meat is fully coated with all layers.
Melt the fat (I use tallow) into a skillet, and let the skillet get warm for about 5 minutes. When it is ready, put in the steaks.
Cook for about 4-5 minutes, and then flip the steaks.
They should be a beautiful golden brown. Cook on the other side for another 4-5 minutes. Then, remove from the skillet so they don't burn.
Lovely! Use the drippings from the pan to make gravy. Add flour to the fat to make a roux, then add milk and stir constantly until it thickens up. Serve with mashed potatoes and veggies.
